Hearty Arugula Salad:

 

 Hearty Arugula Salad  

 

   

Ingredients:

Tools recommended for best results: Mandolin Slicer

2 cups fresh Arugula leaves

1/2 cup baby kale

2 cups spring mix salad or baby spinach leaves

 1/2 cup walnut pieces soaked 2 hours ahead OR soaked Almonds

1/4 cup raw Sunflower seeds

1/4 cup raw Pumpkin seeds

2 tsp chia seeds soaked in 1/2 cup water 1 hour ahead ( can stay in fridge for use for 7 days )

1/2 cup cherry tomatoes

2 Celery sticks, slices thin

1 Royal Gala apple with skin cut to small pieces in mendolin

2 small to medium beet root boiled slightly and cut small in mandolin

1 Avacado medium ripe cut to pieces to be added on top in the end

Salad Dressing: 

1/8th cup cranberry/ pomagranate juice * optional Or 1/2 teaspoon pure maple syrup * optional for sweet sour zingy dressing ( make extra to store in fridge for upto one week in glass airtight jar)

pink salt to taste

black pepper to taste

1/4 tsp dry basil leaves

1/8 cup apple cider vinegar with mother

1/8 cup of flax seed oil

1/8 cup of extra virgin olive oil  OR grapeseed oil

Method: 

Mix the arugula leaves and spring mix together in a big open salad bowl. Mix the dressings ingredients and set aside. Drop walnuts and chia seeds into the salad along with peppers and cherry tomatoes. Toss with the dressing and mix well. Great on its own or part of a summer menu!

Apple cider vinegar with mother-- for scraping toxins from the body * master cleanser
